My Healthy Eating Plan

Good morning to all.  Snow is slowly melting here in the Midwest.  Not soon enough since we had 14 inches, but it will happen.

Today's eating plan is going well.

Today's menu:

B - 2 oopsies = 1 egg
      1 Greek Yogurt

L - Salad with 2 boiled eggs
      apple

D - Chicken
       veggie mix
       blueberries
       Greek Yogurt

My Healthy Way of Eating

Good morning to everyone.  Had a good day yesterday following the fat fast just for a little variety.  I am back on my old WW plan today.

B - Protein shake with almond milk, 1/2 banana and avocado
       Protein powder 

L - Large salad with homemade ranch 
      Homemade croutons 

D - 2 oopsies
      Greek yogurt
      1/2 c blueberries

My Black Bean Quiona Burgers

This is my own recipe that I used for some delicious bean quinoa burgers.

First, I already had approx. 1-1/2 cups quinoa  cooked so I used that amount
1 can black beans, drained and rinsed
1 c chopped onion
1 t garlic paste since I didn't have fresh
2 beaten eggs
Salsa
pepper
I didn't add any salt because I have to watch sodium
I put in a little homemade taco seasoning - salt free

Put all in food processor and blend well.  Chill in refrigerator until you can form into patties.  Actually,  I didn't want to wait so I put this in a meat loaf pan and baked 350 for 25 minutes.

Cut into 8 servings after cooled a little.  

Approximately 120 calories for 1 serving plus 80 calories if you serve with a lt wheat  bun for a total of 200.  

Great with a little cheese and additional salsa.

My Diet Peanut Butter Pie or Dessert

I have made my version of an old Peanut Butter Pie recipe:

Put in mixer bowl:
1 pkg sf instant butterscotch pudding 4 serv size
2/3 c instant dry milk (can use equiv. of skim milk)
1-1/3 cups water (I used a little more to give it a better texture)
1 t peanut butter flavoring
Mix well.

Blend in:  
1/4 c reduced fat peanut butter at room temp
1/4 c Cool Whip Lite 
Spread mixture in a graham cracker crust.  I didn't use this as I wanted to cut calories so I crushed up a packet of Snack Well Cookies in the bottom of my pie pan and then poured the filling over that.
Spread 1/2 c of Cool Whip Lite on top and top with 2 T chopped peanuts (I used only 1T as that seemed enough)  
Chill at least 1 hr 

Cut into 8 pieces

Each serving would be 214 calories but my version is only 136 calories for 1/8th of the pie.

My skinny husband even liked this but he added a touch of his own - little mini marshmallows and a few M and M's.  Oh well! 

My Diet - My Own Plan Based on the Old Weight Watchers Plan

Good morning to all.  Today is another cold day here in the Midwest.  Snow is predicted again tomorrow.

My weight loss "diet" plan is going well.  I prefer to call this weight loss and not the d word.

My low calorie sloppy Jo recipe that I made yesterday:

16 oz.  ground turkey
1 c chopped onion
12 oz diet Coke
1/4 c reduced sugar ketchup or sometimes I use salsa

Brown turkey & onion and drain or blot fat off.  Add ketchup and diet coke and simmer 30 - 40 min. or until most of the liquid is absorbed.

Use 1/3 c on light wheat bun.  This time I put it on 2 taco shells and made tacos with lettuce, onion.  Didn't have tomatoes or I would have added those.  Really a yummy meal.  

Served this with 1 cup of cooked veggie

Approx. 200 calories with bun.  Without the bun the meat mixture is around 123 calories for 1/3 cup.

Good Day Following my Eating Plan

Today was a great day here in the Midwest although we have 10 inches of snow on the ground and the temp this a.m. was only 1 deg.

 My eating plan went well.  Here is my menu:

B - Greek yogurt
      oopsie roll

L - cauliflower and broccoli
      1/3 c, sf  turkey sloppy jos
      3 corn tortillas
      1 serving sf homemade butterscotch peanut butter dessert

D - 1 c. homemade broth
      1 oopsie roll
       3/4 c, blueberries

Walked 60 minutes total - 2  times  30 min. each

Lots of water

My New Way of Healthy Eating - WW Old Plan

I mentioned that I am now following a way of healthy eating.  Well, actually, I can't call it new since I have been doing this before.  It is an  old weight watchers plan - 1994 Personal Selection.  I love it since I am eating a very balanced amount of food with portion control.

I eat  the following choices each day:

2 Milk
2 Fruit
3 or more vegetables
3 Fats
3 Protein
4 Breads
8 glasses of water

Also may have up to 14 personal selections and up to 700 optional calories

Today's menu:
B - "oopsie" roll
      cup yogurt
L - turkey pattie on light bun with onion, mustard, salsa
      1 cup coleslaw made with light dressing
S   "oopsie" and 1/2 cup  sf pudding
D - 1/2 banana
       1/2  c blueberries
S - 6 cups air popped popcorn

Hope some of you reading this will join me in this endeavor.  I am so ready to get into my spring clothes.  I need to lose around 15 - 20# and believe I can do it with this plan.

Fabulous Low Calorie Dessert

I believe I have posted about my making the "oopsie" rolls  for my new way of healthy eating.  Well, today I made a fabulous dessert using those and sugar free pudding.

I made the sf instant chocolate pudding using skim milk and then I took a roll and placed it on a plate and added 1/4 cup of pudding, then added another roll and the remaining pudding.

My "oopsie" was made with sweetener and cinnamon.  Delish.
